Ma (describes a feminine noun)
ma soeur my sister

Mes (describes a plural noun)

Mon frère s’appelle Thomas. My brother’s called Thomas.
Ma soeur s’appelle Sophie. My sister’s called Sophie.
Mes parents s’appellent Luc et Pauline. My parents are called Luc and Pauline.
